Found this neat Epicurious app on Google Play Store which is really handy except for its non metric system. The recipes are categorized but you can also use its search engine to look for word-relevant recipes. Users get to rate and comment. It's so easy to pick one out of the many results and customize the recipe accordingly - just choose a top-rated recipe and consider other users' suggestions!
For the crust I just used the lazy version for cakes' biscuit base, using biscuit crumbs and butter. Press evenly onto pan and bake at 180°C until crispy for less than 10 minutes.
For the filling:
110g sugar
2.5tbsps cornflour
100ml water
50ml milk
2 egg yolks, whisked
1/2tbsp butter
25ml lemon juice
1tsp lemon zest, grater
Preheat oven to 200°C. Heat sugar and cornflour in pan, whisk in water and milk, cooking until it comes to a boil. As the mixture smoothen, pour half of it into the yolks, then pour it back into the pan. Simmer the mixture while whisking until smooth and thickened. Remove from heat and mix in the lemon juice, zest and butter. Cover surface with plastic wrap.
For the meringue:
2 egg whites
1/8tsp cream of tartar
55g sugar
With an electrical whisk, beat whites and cream of tartar with a pinch of salt until soft peaks form. Gradually add in the sugar in batches, beating until stiff peaks are formed.
Pour filling over the crust. Cover evenly with meringue. Bake for 15 minutes.
If the filling would not set upon retrieval, do be patient. I woke up the next day to a successful pie, except that it was really shallow thanks to the pan. :(
