200g brown sugar
160g smooth peanut butter
1 egg
185g flour
1/4 tsp soda bicarbonate
Preheat oven to 180°C. Combine together butter, sugar and peanut butter until smooth. Beat in egg. Fold in flour and soda bicarbonate. For each cookie, form a ball dough between palms using approximately 1 tbsp of the dough, press to flatten a little. Arrange the cookie dough loosely on a baking tray and bake for 10-12 minutes, or until the edges are slightly golden.

You can combine the dough with crushed peanuts, or as the original recipe suggests, chopped chocolates! Add or subtract the peanut butter and sugar amount as you like. The quality of peanut butter plays a major role in this recipe so if you are willing to invest, go for it.
My cookies turned out really sweet because I wanted to use all of the 160g peanut butter in the jar and was not going to risk cutting out too much sugar ...
